Beef and Citrus Salad Recipe

Note

Ingredients:
  • 1 lb. beef sirloin, thinly sliced
  • 1 grapefruit, segmented
  • 2 oranges, segmented
  • 4 cups mixed greens
  • 1/4 cup chopped walnuts
  • 1/4 cup crumbled feta cheese
  • 1/4 cup olive oil
  • 2 tbsp. fresh lime juice
  • Salt and black pepper to taste
Instructions:
  1. Heat a skillet over high heat. Add the beef and cook for 3-4 minutes per side until browned and cooked through.
  2. In a small bowl, whisk together olive oil, lime juice, salt, and pepper to make the dressing.
  3. In a large bowl, toss the mixed greens with half of the dressing.
  4. Arrange the beef, grapefruit, orange, walnuts, and feta on top of the greens.
  5. Drizzle remaining dressing on top and serve.
